12 Days of Christmas: Day 5 - Gingerbread

Hi everyone,
So we are going to make some gingerbread (don't be scared) I can see everyone turning away and just buying some gingerbread men. Well don't this recipe is simple and super tasty. I love making this it really is so christmasy tasting and will fill you tummy with sweetness (even the most humbug in the family will enjoy). 
So grab the spices and . . . Happy Christmas!

400g plain flour
3/4 tsp bicarbonate of soda
2 tsp ground ginger
2 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground nutmeg
1/2 tsp salt
180g butter
125g dark brown sugar
1 egg
125g black treacle

First you will need to sift together the flour, bicarbonate of soda, ginger, cinnamon, allspice, nutmeg and salt set this in a bowl to the side.

Put the butter and sugar into a free standing mixer with the K attachment or a bowl and use a hand held mixer. Cream these together until light and fluffy.


Turn up the mixer to a medium speed and add the egg and treacle. Mix this until combined, scrape any unmixed ingredients down and mix together.


Turn the mixer back down to a sower speed and gradually add the flour mixture a couple of table spoons at a time, don't forget to spare down and mix the unmixed ingredients in.


Once this has formed a nice even dough split into 3 portions and wrap in cling film, leave this in the fridge overnight to chill.


When the gingerbread has chilled pre-heat the oven to 170ÂșC. If your dough is still a bit soft you can kneed some extra flour into the dough then dust your work surface with some more flour and roll out your dough.

 You can cut out your gingerbread cookies with cutters or just cut it into squares if you want. If you do wish to use cutters when you have cut out all you can knead the dough back into a ball and roll out again.


Arrange the cookies onto a lined baking tray and bake for about 10-15 minutes. cool the cookies on a wire cooling rack.


If you want to ice your cookies you can use the remade tubes of icing that you can buy in the super market or you can make your own royal icing using this recipe.

1 egg white
1/2 tsp lemon juice
310g icing sugar
Food colouring

Beat the egg white and lemon juice together until light and fluffy.



Slowly add the icing sugar on a very low speed. Once all the icing sugar has been added whisk until it forms stiff peaks.



Then you can split the mixture into separate bowls and add different colours of food colouring. This is the fun part where you get to decorate the delicious gingerbread cookies.



Once I had my icing all mixed I put it into food bags and cut a small hole in the bottom to use as piping bag.



My niece and nephew had so much fun decorating the cookies and we used the gingerbread man as a reindeer (if you turn him upside down it looks like a reindeer).



The kitchen smells amazing when these are baking so I really hope you try to make these they are so tasty and a real christmas treat.
